This course can only be done after completion of the Professional Cook Course.

The course includes:

  • Menu Planning and Recipe Costing

  • Preparing, Cooking and Finishing: Stocks, Soups and Sauces

  • Preparing, Cooking and Finishing: Fish and Shellfish Dishes

  • Preparing, Cooking and Finishing: Meat, Poultry, Game and Offal Dishes

  • Preparing, Cooking and Finishing: Vegetables, Fruits, Pulses and Vegetable Protein Dishes

  • Preparing, Cooking and Finishing: Rice, Grain, Pasta and other Farinaceous Dishes

  • Preparing, Cooking and Finishing: Egg Dishes

  • Preparing, Cooking and Finishing: Pastry and Bakery Products

  • Preparing, Cooking and Finishing: Desserts

  • Final Assessment

  • Research of “given topic”.

  • Graduation

Requirements:

  • Grade 11 minimum (we do not work on a point system) with English and maths literacy.

  • An interview and aptitude test is conducted per candidate

  • Passion to be a chef and loves cooking.

  • 16-35 years old

  • Prepared to work long hours.

  • Will get sore feet, cuts and burns.

  • Committed to work public holidays.

  • This is not a marriage, but it needs a 1-year commitment.

Intake is in March in completion of Level 2 Diploma Cook

An application fee of N$ 350.00 is payable on submission of the application.

The school fees include:

The Full–time Diploma in Hospitality classes are held from Monday to Friday each week from 09h00 till 16h00.

Students are also required to work the occasional evening function.

Students will complete an internship at a suitable establishment in line with their career path.

To ensure that each student receives personal attention, each course is limited to 12 applicants per intake, which guarantees hands-on teaching. The academy accepts both matriculated and non-matriculated students who show a natural flair for cooking, a passion for food, and an aptitude for entertaining and hosting guests.
